Not sure what a hemi truck sounds like... compression and cam have a lot to do with the sound of an exhaust system. Not sure how headers effect sound. I have always used headers, more for the performance aspect than anything else. I have Flowmaster American Thunder dual exhaust on my 70. The system comes with Flowmaster 40 mufflers which I am pleased with. Not quiet but you not too loud either. They sell a system to fit the A-bodies and with a little work fit very well.
