I got this from my secret pal today so as promised i'm passing it along =) This is so very simple! I buy organic sweet potatoes or yams. I like the more orange ones but get confused on what is what...I think my produce guy gets confused to as sometimes they are labeled yams and sometimes sweet potatoes. Anyway...buy the dark red kind. Wash really well. Slice as thin as you can length wise. I use my dehydrator which is the magic Air but any dehydrator will do. I simply space them around the trays...one tray with all of the slices layer out in one direction, the next tray I lay out the other way. I rotate my trays every 1/2 hour till they are dry. Store in plastic ziplock after cool. You can do this with apples, pumpkin slices etc. I love the yams because they get hard enough to be good teeth cleaners too. I don't like using an oven for this task. My dehydrator does not get over 104 degrees so all the nutrients remain. My oven's lowest setting is 150 and that would certainly kill off enzymes and nutrients. I suppose you get leave your oven door open and have a fan blowing in to lower the temp. That might work. But I would want to put in a thermometer to keep the temps below 110.
