This isn't a bug in Chrome. The same thing will happen with Firefox/Safari. To determine which extensions (i.e. mp3) we play in the browser, we look at the available NPAPI plugins. That's the only way we can play the content in the browser window. QuickTime's plugin denotes that it can play mp3 files, and so we use it.
