In order to downgrade to the other channels, you must uninstall chrome, and reinstall it.
In order to run Chrome in all 3 versions you would have to run them as portable versions, you may download them at portableappz.blogspot.com the only thing is that they will not be able to receive any updates, but once there are updates, the new versions will be posted, and you would have to download them, and install them.
