I stopped using Chromium (for Linux) several times because of stability problems, but this past week I've stuck with it and been mostly happy about its stability recently.
The only thing that I've noticed that causes it to lock up sometimes when I try to save a file. It only seems to happen when I click on the same link a second time (when the browser doesn't respond and I think it didn't 'capture' my click). Two 'save' dialog boxes eventually appear, but I'm unable to save or do anything at that point. I don't know if the problem truly lies with Chromium or whether it's a Nautilus (file manager) issue. I would consider filing a bug report but am not sure how to go about doing that.
