It depends on the size of your environment and which apps you are referring to. Is it just CUCM/CUC or does it included CUPS/CIMP and UCCX and possibly CUEAC?
How many servers are you talking? This can all be done in a day/night, but depends on the size and speed of things. I had a customer that their b-series was on shared san, and at night when no one was using it, the IOPS were terrible due to backups being run on the SAN, so my P2V took 3x as long. CUCM DRS restore for a 2500 user system took 6 hours. It all depends, best way is to get your VAR to quote it for you.
