If you're changing over all at once, the below suggestion should work. If you're doing them in batches, you can change the integration to Search for Exchange Servers, using the Exchange 2003, 2007, and/or 2010 option, and it will automatically detects moves in that circumstance.
Our move was very slow, and with it set that way, it does detect the moves automatically. Table 4-1 from http://www.cisco.com/c/en/us/td/docs/voice_ip_comm/connection/9x/unified_messaging/guide/9xcucumgx/9xcucumg030.html only applies when you choose a specific Exchange server. If Unity Connection is set to detect it, the table doesn't apply. Once the move is complete, just change the integration to specifically connect to the new server.
