But be aware that the 'ip helper-address' causes many broadcasts to 
be forwarded in addition to just DHCP, which you may not want to happen
(considering all the 'uninteresting' ones that will be unicast to your
DHCP server).  Among the ones in the UDP forwarding list:

To turn this back into a question, are all of these forwarded by
default?  Is there a way to determine which ones are forwarded?

I generally use 'no ip forward-protocol udp xxx' for the more obvious
and noisy offenders that I want to be sure aren't forwarded just to be
sure, and they appear in the 'show config', so they must be enabled by
default.
