I believe there is a course called IMCR (Installing and Maintaining Cisco
Routers - version 11.3 offered. This course includes all the CIsco Routers
including 7000 series 12000, etc. You should take a look at any of the
training provider

The 7500 series has been around for a few years. I'm not aware of any hands
on training. CCO has complete documentation for the care and feeding of the
system and interface cards. I doubt that very many of us have one in their
home lab.
Rather than designing a network around this router it would be better to
design a network to meet the customers need then see what boxes fulfill that
