Quick answer...
The VIP doesn't have interfaces itself - it allows you to use Port 
Adapters (that can also be used in the 7200) in the 7500.  Various types 
of processing can also be offloaded to the VIP.
The Interface Processors are older, and only work in the 7500 series - you 
can't put them in the 7200s.  I think most if not all Interface Processors 
have reached end of sales, if not end of life.
