Wouldn't it be because the IP address you see in your BGP table is indeed the next-hop. If you instead look at a specific route "sh ip rou x.x.x.x" I would think you would see the BGP neig as you have listed (loopback1's ip address) and then the router has to do a recursive-lookup to find out how to get to that loopback address.
