Configuring LLQ would be a first step. You also have an issue of multiple sites coming into a central hub so you are probably also going to need to setup policing and/or shaping so make sure the traffic does not bottleneck as it comes into the main site. Since you are talking about desktop videoconferencing, do remember that you need to setup QoS not just on the routers but on the switches as well. Also, if your videoconferencing application does not set the Cos/Tos priority bits you are going to need to set those values as well preferablly in your edge switches so your core does not have to do that.
