Go to www.cisco.com and read about Policy-Based Routing (PBR). This may be what you're looking for, but I'm not sure from your description. You might need something a little different depending on what you're really trying to accomplish. If you simply want to force http and ftp traffic to take a different path--to a transparent proxy server, for example--then PBR may be for you.
