Bookmarks exist in two different encodings: PDFDocEncoding and
Unicode. Using, say, $\Omega$ creates a *glyph* which is neither part
of the former nor the latter (which expects a *character*). However,
if you use a real Omega (like this: Ω), it appears in the bookmark.
You should
a) select Unicode for bookmarks in the hyperref package (option
`unicode').
b) use \texorpdfstring to provide an alternative string for bookmark
entries.
This is beyond the CJK list. Please read the hyperref manual and
write to the pdftex mailing list for further assistance.
