Indeed, that is rather strange. In the example file that I provide in Debian (and Ubuntu) called xCJK-extended.tex you will find an example that uses CJK's "xCJK" instead of "xeCJK" and works just as well. I have annotated it with inline comments, and all fonts (except for Cyberbit) are easy to come by and are free. You will find it attached to this mail.
