There are two parts in what you ask:

1.  Uninstalling clamv depends on how did you install it, rpms or compiled?
You can find info on the archives of this list about both options, but you
probably don't really need to uninstall it, just upgrade and configure
(/etc/clamav.conf is now /etc/clamd.conf).

2.  Uninstalling the CommuniGate plugin depends on which plugin you're
using, cgpav is the most used, and it's installation is done by compiling
and copying 2 files and configuring it as an external helper and filter in
CG Pro... So unistalling means just doing the opposite: disable the helper
(the filter won't fire when the external helper is disabled) and erase the 2
files: cgpav and cgpav.conf (they are usually put, in /var/CommuniGate and
/var/CommuniGate/Settings).
