On my own builds, I build ncursesw (mainly because I want UTF-8 support), and make menuconfig is just "tickety boo".
But, I would never bother with ncursesw before the final system. I don't recall having any problems with selecting the desired options in menuconfig when I only had ncurses. Try working around it by doing what you think is necessary, saving the config, reviewing it, checking what still needs to be fixed, and repeating.
