Peter,

 

That sounds like just a bad joker valve in the head.  Cheap and easy to
replace.  It does involve getting a little dirty though.

The "gastric reflux" of the head seems to be gravity related, and only
happens when the boat is moving in waters with some wave activity.

 

The bowl half fills, requiring a "dry" flush to clear it again.

 

Upon arrival, we had the holding tank pumped out, but haven't tested since.
I suspect it has much to do with hoses and hose placement.

 

If the boat is sitting, everything is fine.
