The answer to your question has a lot of variables.  If you were able to
claim $500 in its current condition I would probably take the money and
run.  If you looked at the value as a sum of the parts then it could be
worth ~2k assuming the parts were in average or better condition.  A single
injector can be worth $100.  HP fuel pump =$250.  Water pump =$100.
Transmission could fetch as much as $1k or more.  If the head is good then
you're looking at probably $500.   Add that all up and we're all driving
$100k cars!

If you just want it gone then take what you can get.  If you want max value
then fix it yourself and sell for between $3k and 5k.  If you don't want to
fix anything but still capture the value of the parts then start breaking
it down and selling the individual parts.

Me?  I'd probably take it on as a winter project and continue to use the
engine... But I don't do a good job placing value on my time.  Which means
I waste a lot of it.  Then again, even if you don't get it working you'll
probably learn a lot along the way and you could even make it a team
project so she could learn too.  Of course if you leave it to her then she
gets to decide the value of each option.
