Try procmail.  It will do what you ask.  It might be better to have an 
antivirus software package on the server though.
Virus' are coming through as embedded files and not always attachments.  I 
use a Klez recipe that removes about 90% of the Klez that come to my 
server.  A few do get through and my antivirus software catches them.  I 
also have a recipe to remove the Sircam virus.
