Yeah, we currently do VMware server (no cost, but not Free Software) and VMware workstation (paid application). If anyone wants to add ESX to koan, it's mostly the case of adding a new --virt-type (vmwareesx) -- search cobbler and koan for "vmware" and it should be easy enough to figure out.
