Dunno where/if this is documented, but the header view is obtained by
sending a message to the NSScrollView's document view (I think it's
-headerView).  You could override this method in an NSOutlineView
class to return an instance of your custom view.

I was too focused on trying to find a workaround for the lack of copyWithZone: to realize NSTableHeaderView didn't really have any cell and is getting its data from the columns.
