While I'm not familiar with the original discussion, I will say that the effect you're going for can easily be created using a shadow. If it doesn't look right, the values you're using to create the shadow probably need tweaking. For the recessed look, I use a shadow offset of (0.0, 1.1) or (0.0, -1.1) (depending on whether I'm drawing in a flipped context), which will cast the shadow at a 90 degree angle, and with one pixel of actual shadow. Then I set the color of the shadow to white, with an alpha of 0.75. This technique produces text that looks nearly identical to the labels you see in toolbars.
