Personally I would think DocBook might make more sense. There are already stylesheets for just about every XML transformation for DocBook. So, you can either do current-XML -> DocBook and then use the existing PDF/LaTeX/HTML/RTF/whatever stylesheets or you can write whatever stylesheets you want on your own....it seems to me it would make sense to take advantage of DocBook's popularity..
