Review Comment:
Is there any reason for these not to be in `<scope>test</scope>` ?

If we keep it like this, we get the complete junit, testcontainers and
rest-assured (with all its Groovy deps) into the dependency set of the test
application. As a consequence of that, they will be analyzed and possibly
compiled into the native image when running the tests in native mode. We try to
avoid this as far as possible first because smaller dependency sets compile
faster and second, they may introduce unnecessary native compilation issues. I
should perhaps add a note about that around here:
https://camel.apache.org/camel-quarkus/latest/contributor-guide/extension-testing.html#_minimal_set_of_dependencies
