Cherry-pick of #25767 onto `camel-4.18.x`

Resolution: the 4.23 upgrade-guide entry is dropped, since the guides for
every release line live on main. `createClient()` method extracted from
`doStart()` to enable test mock injection (same as on main). Test import
adjusted from `camel-test-junit6` to `camel-test-junit5` to match 4.18.x module
naming.
Verified: cherry-pick applied, module compilation green on `camel-4.18.x`.
