chore(camel-test-infra-minio): pull MinIO test image from quay.io (#26359)
The minio/minio repository is no longer available on Docker Hub, so
mirror.gcr.io (a pull-through cache of Docker Hub) now returns
"manifest unknown" for RELEASE.2025-09-07T16-13-09Z-cpuv1 and every
camel-minio integration test fails in @BeforeAll with a
ContainerFetchException.
The same tag is still published on quay.io with amd64, arm64 and
ppc64le variants (s390x remains skipped via skipITs.s390x), so switch
the registry and keep the tag unchanged.
