The `signatureAlgorithm` enum of `pqc-signature-action` needs two fixes:
- **`PICNIC` no longer exists.** Bouncy Castle 1.86 removed Picnic, and
camel-pqc dropped the `PICNIC` signature algorithm when it moved to 1.86 in
apache/camel#27052 (Camel 4.23, which the catalog now targets). A Pipe
selecting it fails when the endpoint is created.
- **The first value is malformed.** The list is written `enum:
[MLDSA","SLHDSA","LMS","XMSS","FALCON","PICNIC"]`, missing the opening quote of
`MLDSA`, so YAML reads that entry as the plain scalar `MLDSA"`:
```
['MLDSA"', 'SLHDSA', 'LMS', 'XMSS', 'FALCON', 'PICNIC']
```
`MLDSA`, the standardized algorithm, is therefore not an accepted value,
while `MLDSA"` is offered and would fail in camel-pqc. It dates back to #2468.
Expected: `enum: ["MLDSA","SLHDSA","LMS","XMSS","FALCON"]`.
