Commit 8632b14f10 (CAMEL-23861) uncommented the `components` filter in `docs/source-watch.yml`, which looks like a local development setting committed by mistake. Since then the quick build used by the PR doc validation workflow has only converted the `components` component. Errors in other components, such as the user manual, have not been caught, for example the `camel-jbang-mcp.adoc` table error fixed in #27124, which then broke the camel-website build. This restores the file to its previous state, with the filter commented out, so PR doc validation converts every component again.
