The unescaped `|` inside the inline code `route id: label | sentence` (added
in #27103) is treated as a cell separator, so the `[cols="1,3"]` table ends
with an incomplete row. This breaks the camel-website Antora build:

This escapes the pipe as `\|`.
PR doc validation didn't catch this because `docs/source-watch.yml`
currently restricts the quick build to the `components` component, so the user
manual isn't converted. That will be addressed in a follow-up.
