Backport of #26060 to `camel-4.18.x` ([CAMEL-24594](https://issues.apache.org/jira/browse/CAMEL-24594)). The ticket was reopened because the fix had not been backported. REST DSL response marshalling failures were swallowed silently by `RestBindingAdvice`. With this fix, they are logged on the server side. A cherry-pick of #26060 (commit 11b322fe) with one test-only change: the 4.18.x test starts the context with `context.start()`. The `VertxPlatformHttpEngineTest.startCamelContext` helper is newer than this branch, and on 4.18.x `createCamelContext()` already sets the RestAssured port, so the two are equivalent.
