CAMEL-24616 - provide JDK 27 Jenkins job
* `jdk_27_latest` is now available on Apache Jenkins Ci using Temurin GA
version
* launch weekly by default
* launch the JDK 26 only monthly now. it will be useful as a baseline
and be able to continue to launch it manually for specific case but no
need to monitor it carefully as soon as JDK 27 is fine
