We have enough serialization formats already. 2. has the benefit of being cross-platform out of the box. 3. is obviously going to be fastest, especially if you require rows to be in sorted order so you can basically stream directly to an sstable data file. Neither 2. nor 3. is inherently unreasonable; the question is whether we can get to "fast enough" with 2.
