bq. If you're this passionate about having a "correct" data model, reworking 
the virtual tables to be ((keyspace), table) today without ORDER BY would be a 
better approach. At this this gives us the ability to write tooling around the 
tables and if ORDER BY improvements make it in, great. If not, well, we still 
have the data and can sort client side.

I think this would be perfectly fine, FWIW.
