Looking at it more closely, I think this would make more sense

The current way it is refactored makes these constructors go away but otherwise
the structure we have there now is still in place.
We have EncryptionOptions for "clients" and ServerEncryptionOptions which
extends "client" ones. That does not make a lot of sense.
