I claim that isn't a common use-case, and most users will just want the
latest. I think of this tool like gcc or java. Users don't really switch all
that often, and when they do, it's just to use whatever is the latest. To me,
the important thing is for a user to be able to easily install this extension,
and to easily be able to update to the latest version.

That said, if a user did want to switch, with my above ideas, a user would
need to either install a new .vsix file and/or a new version of Daffodil on the
system. In one of the ideas where we use the version of Daffodil on the system,
one could do someting like Java where different versions are installed to
different locations with the ability to switch. But again, I dont' see that
complication all that necessary for users.

Note that this is all from a users perspective. From someone developing this
extension, it does need to be easy to switch versions (for example, to test a
snapshot), but I assume that's all part of the build process.
