## What changes are proposed in this pull request? Spark 4.0 and 4.1 run on Delta Lake 4.4.1 since #13271, but `dev/release/build-release.sh` still builds their bundles without `-Pdelta`, so the binary releases for Spark 4.x would ship without Delta support. This adds the delta profile to both builds. The nightly already builds both bundles with `-Pdelta`. Spark 4.2 has no release bundle yet. That stays a separate call for the release. ## How was this patch tested? Script change only. The nightly bundle job builds Spark 4.0 with these profiles (plus hudi, celeborn and uniffle) successfully. Its Spark 4.1 build currently fails on an Iceberg test-compile error unrelated to Delta (`value SCAN_TASK_SET_ID is not a member of object org.apache.iceberg.spark.SparkReadOptions` in `VeloxIcebergSuite`), which breaks this script's 4.1 build with or without this change. ## Was this patch authored or co-authored using generative AI tooling?
