URL: https://github.com/apache/gravitino/issues/14494

   ### Version

   main branch, checked at 90da2776a.

   ### Describe what's wrong

JDBC metadata methods accept LIKE patterns for schema/table names. Passing
source names unchanged makes backslashes act as escapes, so PostgreSQL objects
can appear in listings but fail exact loads or alters.

   ### Error message and/or stacktrace

See the behavior described above; source-valid objects or invalid
configuration are not reported consistently.

   ### How to reproduce

Create a PostgreSQL schema or table whose identifier contains a backslash,
underscore or percent sign. List and load the object through Gravitino, then
alter its comment. The literal name should be matched consistently.

   ### Additional context

A focused patch with regression tests is prepared.
