[PR] fix(server): convert message header view to concrete type before serialization [iggy]

   `IggyMessageHeaderView` is a zero-copy read-only view that intentionally
   panics on to_bytes(). Use `to_header()`` to convert to `IggyMessageHeader`
   for serialization in encrypt_messages.
