Since this was merged, `kogito-codegen-processes-integration-tests` fails on
main, and on every PR whose CI merges in main:
- `BusinessRuleTaskIT.testBusinessRuleTaskWithIOExpression`
- `CallActivityTaskIT.testCallActivityTaskWithExpressionsForIO`
- `CallActivityTaskIT.testCallActivityTaskWithExpressionsForIONested`

This doesn't look flaky. The three tests pass on the main run just before
this PR (39801736597
(https://github.com/apache/incubator-kie/actions/runs/39801736597)) and fail on
both Java 17 and 21 from 39865526195
(https://github.com/apache/incubator-kie/actions/runs/39865526195) onward.
The likely cause is the new `unbind()` logic in `AbstractProcessInstance`.
It copies every vmap key that isn't a declared field into additionalProperties.
That includes the internal `FormalExpression_N` variables created for I/O
expressions, so they show up in the model as undeclared variables.
`TravelTest.testTravelVisaRequired` in `kogito-examples` (expected 4, was 5)
looks like the same problem.
