   Add stm32h7s8-dk Ethernet support

   ## Summary

   - Add jumbo-xip configuration which includes Ethernet networking.
   - Add STM32_ETH_MDIO GPIO Kconfig option which enables GPIO emulation of
SMA clause-22 communication with PHY; required when JP6 is in default
poition. If GPIO emulation is not enabled, JP6 must be in alternate
position to allow SMA communication with LAN8742A PHY via ETHMAC.

   ## Impact

   - User experience: No adaptation required. This fix extends existing
behavior.
   - Build: No impact.
   - Hardware: Affects stm32h7s8-dk board.
   - Documentation: Update stm32h7s8 platform to add Ethernet and missing XIP
information
   - Security: No impact.
   - Compatibility: Backward compatible - adds functionality

   ## Testing

   Build Host:

   - OS: Ubuntu 24.04.4 LTS
   - Compiler: arm-none-eabi-gcc 13.2.1

   Target:

   - Architecture: ARM (STM32H7S3L8)
   - Board: STM32H7S8-DK
   - Configuration: Default stm32h7s8:boot-xip and stm32h7s8-dk:jumbo-xip
configurations(to create both bootloader and external flash images)

   Testing performed:

   - Connected Ethernet to stm32h7s8-dk (with JP6 in default position)
   - Burnt/booted built default boot-xip and jumbo-xip configured images
   - Ran ostest to successful completion
   - Ran commands/log as shown in target documentation
   - Also verified Ethernet communication with CONFIG_STM32_ETH_MDIO_GPIO
disabled and JP6 in alternate position

   Runtime testing:

   From target console:
