This is 2 bugfixes
- fixes the hybrid quickstart to create both tables at once
- i can't quite tell where this broke, but it uses the /tableConfigs API
- this requires creating both tables at once, or it fails with "table
already exists"
- adds `@Produces(MediaType.APPLICATION_JSON)` to the timeBoundary methods
- otherwise these fail with `MessageBodyWriter not found for media
type=text/plain, type=class
