Per
[https://samza.apache.org/learn/documentation/latest/jobs/samza-configurations.html#advanced-storage-configurations],
the token directly following "stores." in config may in fact NOT be the store
name. In the case above, "default" is used as a reserved keyword to set a
default value that applies to all stores.
This is an investigative ticket to ensure that samza code does not assume what
follows "stores." is always the store name.
