looking more closely at this, I think the right thing to do is alter the
approach with StreamsJacksonMapper by declaring a configuration bean and using
a private static map with exposed singleton access pattern based on the
configuration bean.
it will be easier to alter the degrees of variation possible with this class
with a configuration bean.
this approach is being used well in streams-converters.
