build: drop redundant doxia-core override from maven-site-plugin
maven-site-plugin 3.22.0 already brings the whole Doxia 2.1.0 set. The
override pinned the same version, and bumping it alone (#2101) mixed
doxia-core 2.2.0 with the plugin's 2.1.0 modules, failing attach-descriptor
with a Guice MissingImplementation for MarkdownParser$MarkdownHtmlParser.
Doxia now moves with the site plugin.
