Hi Brendan, Migrating CE to a new server is not really that different from migrating any Rails app. I'd start off by setting up a staging deployment on the production server so you can make sure the app runs cleanly (gems versions are correct, dependencies are OK, etc.), and then it's just a question of dumping and importing the database.
The one thing that might pop up is images; if the image uploads (profile pics, photos, etc.) are on S3, then you shouldn't have a problem, but if they were using the file system backend, you'll have to move a bunch of images over. Just something to watch out for. If you have any other specific questions please let us know.
