i'm sure the very hot water works great!  and i'd be surprised if it
caused a problem.  the drying problem, like i said is most likely
because the heat comes from a hot heating element and is very nonuniform
radiant heat so you could easily get spots hotter than 190 deg F. 
that's why some things are only "top rack" dishwasher safe, to keep them
away from the heating element.  those industrial washers also do a great
job of splashing and spraying around i believe, very good machines.
