There's also uCLinux, http://www.uclinux.org/ . Although aimed at microcontrollers, it's main purpose is to run on 68000s with no MMU or FPU. It works, though there's no Mac-specific stuff and therefore would probably take a good bit of work to get running on a Plus or the like.
