I cast my vote for A/UX for a couple of reasons.

First, just the "how cool is this" factor is very high when you see how well
Apple integrated Unix with the MacOS Finder. It's pretty seamless. Plus, it
shows how far ahead of the curve Apple was WRT *nix operating systems for
the masses.

Second, you can do a lot of stuff with plain old Mac software running
natively and not hassle with either dual-booting or emulating MacOS.

I have a Quadra 650 running A/UX and it's incredibly cool. I suspect but
cannot quantify that A/UX will be better optimized for Mac hardware because
it was developed by Apple. A lot of useful software has been ported as well,
so you shouldn't have a problem putting together what you need for web
services.
