I've used both telnet and ssh on my Plus and Classic with a SCSI-> Ethernet adapter. Works very well, but I've yet to find an SSH client for System 6. Since I used mine as a local console to a Linux box (Quadra 840AV, incidentally) and security wasn't really an issue I tended to stick with System 6 and telnet. It was great fun using a vintage 1986 computer to telnet, irc, and a couple other things at once. And they said Macs had bad multitasking ;)
